The Secret To Great Fried Chicken!


The following video shows you how to make fried chicken, which is perfectly seasoned and extra, crunchy. It is a bit like Kentucky Fried Chicken, but is a bit different. First the chef shows you the ingredients to make your seasoning. He has cut his chicken up into eight pieces. This recipe works well for chicken strips as well and of course you can purchase a chicken that has already been cut.

You will use an average size chicken. Trying for one with extremely large pieces can be harder to cook evenly.

You will prepare an egg wash. An egg wash is just a couple of large eggs, beaten with ¼ cup of water added to thin it. When preparing fried chicken you will cut the chicken into pieces and wash it well. Some people remove the skin and others do not, it is a personal choice. For a crispier crust and juicier meat, leave it on. Now prepare your dry coating in a bowl. This is where the secret ingredient comes in. To your dry mix you are going to add ½ cup dried mashed potato flakes. This is going to add a twist to the flavor and make the chicken crunchy.

Here are the dry mix ingredients:

  • cup all-purpose flour
  • 1/2 cup instant mashed potato flakes ( any brand)
  • 1 Tbsp. standard table salt
  • 1 Tbsp. dried herbs (can also use poultry seasoning)
  • ½ tsp. fresh ground black pepper
  • ¼ tsp. cayenne pepper
  • ½ tsp. garlic powder
  • 1 tsp. onion powder or onion flakes

Dip your chicken pieces, one at a time in the egg wash. Then roll it in the dry mix and place it in a plate. When all the pieces have been coated, let them set for 20 minutes. Then one at a time repeat the process. Dip the chicken pieces in the egg wash and then the dry mixture. You chicken will be well coated at that point. Set the chicken aside for an additional 20 minutes before cooking.

Now in a skillet heat your canola oil. Heat the canola oil to about 350 degrees. Place 4 pieces of chicken in the oil. Do not over crowd your chicken. Let it fry for about 15 minutes, turning it every 3 – 4 minutes. When it is fried, set aside for 10 minutes before eating.
