Grate steamed cauliflower in a food processor or mince with a knife. Use towels or paper towels to squeeze out the excess moisture from the cauliflower. Do not press too hard and squash the cauliflower. Mix the cauliflower with one egg and one-quarter of a cup of mozzarella cheese. Mix until all the cauliflower is coated with the cheese. Roll and press palm-sized lumps of the cauliflower mixture into squares on a baking sheet. The squares should be about the same size as a piece or regular white bread. Bake until the cauliflower is a golden brown. Ten minutes usually does the trick. Place one cooked cauliflower square in a frying pan that has been sprayed with a small amount of cooking spray. Cover the cauliflower square with two slices of American cheese or any cheese you prefer. Place a second cauliflower square on top of the cheese.
Fry the sandwich just like you would a regular grilled cheese sandwich. You get the same toasted texture and the same cheesy taste but you drop all the carbohydrates that are in bread and replace them with something that is good for you and helps you lose weight. Fry the cauliflower and vegetables of your choice in separate frying pans. This saves you some time. Add one egg to the cauliflower. Add the vegetables and stir together. You just created a healthy dish that substitutes cauliflower for rice and reduces the number of calories and carbohydrates you get from eating rice.
Substitute cauliflower for macaroni and get the same taste as regular macaroni and cheese with no carbohydrates. Break up the cauliflower into small pieces. The regular pieces that come off of a cauliflower when you pull it apart is the size you want. Put the pieces in a crock pot or slow cooker. Combine two cups of milk, one can of cheddar soup, one-half of a bag of grated cheddar cheese, and one-quarter of a cup of onion in a pot. Heat the mixture on low to medium heat until melted and completely blended.
